Easy Chia Seed Pudding

Easy chia seed “pudding”

This chia seed pudding is super easy, and is perfect for a snack on the go. The chia seeds mimic tapioca, but has a ton of health benefits such as omega-3 fatty acids, rich in antioxidants, fiber, iron, and calcium.

I do a lot of eyeballing, but here is what you’ll need:

Unsweetened Vanilla Almond milk (or whatever milk choice you prefer, add a little vanilla extract if you're using plain milk)
Chia Seeds
Agave / Honey (or sweetener of choice)
Strawberries / Blueberries / Bananas (or any fruit for topping!)
Granola (optional!)

The great thing about this, is that when you have your “pudding” base, you can pretty much customize it to your own liking!

  • I'm not great with measurements, and everyone will have their own liking as far as texture goes! I think it's close to 4 tablespoons of chia seeds per 1 cup of almond milk. (I like to make a bulk that’ll last a couple days for 2 people)

  • Put chia seeds and milk together in a mason jar, and stir until chia seeds are soaked. Add your sweetener and and stir. Try to make sure they are not clumpy! 

  • Refrigerate overnight or for at least 2 hours. (The longer you wait, the more the chia seeds absorb the almond milk)

  • When you're ready to eat, chop up your fruit toppings and add granola if desired. Drizzle a bit or honey or agave on top for extra sweetness.

That's it! A healthy tapioca pudding with tons of fiber and antioxidants!
