Sweet Potato Brownies

These are a great treat if you are craving something sweet and filling. Sweet potatoes also great for women’s luteal phase, as they are great for stabilizing blood sugar, reduces bloating, mood and energy support. But really, just an overall treat!

  • 3/4 cup sweet potato puree

  • 1 cup nut butter

  • 1 tsp pure vanilla extract

  • 6 tbsp oat flour (or flour substitute of choice)

  • 1/2 cup chocolate chips (give or take, measure with your heart)

  • 2/3 cup sweetener (I used maple syrup, but agave, monk fruit sugar, honey are great)

  • 6 tbsp cacao powder

  • 1 1/2 tsp baking soda

  • 1/8 tsp salt

I added all of the ingredients to a big bowl and used my hand mixer. Add to a greased muffin pan and bake at 350º for about 25-30 min (or until your desired toothpick trick*)

*Toothpick Trick:
Too Early: Toothpick comes out with wet, runny batter.
Fudgy: A few moist crumbs or a small, sticky smear.
Cakey: Almost clean, with just a couple of dry crumbs.
Over baked: Entirely clean and dry.
